Oh arugula, how do I love thee? Let me count the ways…

I’ve always been a good vegetable eater - ask my mom… But as a kid, my fondness for salad was limited to iceberg and romaine lettuce. Whether it was the bitter taste or different texture, I can’t be sure what turned me off to the more leafy greens like arugula and spinach. Fortunately, I have since grown, and with me, my tastes have matured.
My new-found love for arugula need not be hidden. Lately, I cannot get enough of the stuff. Nothing has hit the spot quite like baby arugula with some balsamic vinegar, and a few tomatoes, and you know, I am A-OK with that. A good source of phytochemicals, vitamins A, C and K, and iron plus the cancer-fighting powers of it’s cruciferous family make arugula an extremely worthwhile food in my book.
So here’s to you arugula! Nom, nom, nom.
